One of my favorite weeknight dishes is Turkey and Veggie Lettuce Cups! These are really easy to create, they pack in a ton of veggies and have some awesome flavor. They are so pretty to make with all of the vibrant colors from the veggies and oh so delicious! These are really quite simple, there's just a little chopping involved to get all the veggies ready to go. The kids really love these because they seem to like veggies that are not cooked more than cooked. The kids also get to pick all of their own toppings which is always fun.
One of my favorite things to do in the kitchen is chop veggies. These kid knives are my favorite for kids to try chopping. (Affiliate). We have tried several and these are our favorite.
Making Lettuce Cups
I typically get my rice going on the stove while I start chopping veggies. This makes everything come together at the same time. Then I start the ground turkey and the diced onions. I do mine separate since the kiddos don't really like the onions but you could cook these together to make less dishes. I love adding a little olive oil and salt to caramelize the onions. I've been using soyaki from Trader Joes or Amazon to add a super delicious teriyaki flavor to the turkey. These really makes the dish taste similar to lettuce wraps you'd get at any Asian restaurant. It is a tasty combo of soy sauce, garlic, sesame and ginger. You could always make your own but I do love the taste of this one as is.
Once the meat, onions and rice are cooked, you can start assembling your lettuce cups. I start with those items first then add my favorite veggies to the top.
Turkey & Veggie Lettuce Cups
Ingredients
- 1 Pound of Ground Turkey
- 3-4 tablespoons Soyaki Sauce
- Yellow or White Onion, chopped
- 3 Tablespoons of Olive Oil
- 1 Cup of White Rice
- Cucumbers, sliced
- Chopped Carrots
- Cherry Tomatoes, sliced
- Yellow Bell Pepper, chopped
- Romain Lettuce
Instructions
- Cook turkey until lightly browned
- Add Soyaki to meat, set aside
- Cook rice, set aside
- Saute onion with olive oil and salt, set aside
- Cut romain lettuce to palm sized cups
- Top lettuce with rice, turkey, caramelized onions and veggies
These are a family favorite at our house. The kiddos love the flavor of the ground turkey mixed up with the rice and veggies. They don't always eat the lettuce but they have fun putting together their own style of "cups". I love that these are a simple and fun meal with fresh ingredients that taste good!
