Since the new year started I have been trying to eat healthy(er). I have been doing really well and attending the gym pretty regularly. Today I decided it was time for something hearty!
I didn't think I even liked salsa verde until I had it recently with tacos. After that I have been thinking about what else I could do with it. I saw a jar when I was shopping at Trader Joe's and decided to make Salsa Verde Chicken Enchiladas. I had pretty high hopes for it to turn out fabulous... and it really did! I really thought about just using the salsa as the sauce and quickly realized that it would be too much. So, I made a white sauce to blend in with it. MMMmmm.
After making the sauce just use it how you would any enchilada sauce and roll up the tortillas with your favorite toppings. I added chicken and mozzarella cheese.

Salsa Verde Chicken Enchiladas
Ingredients
- 3 Tablespoons of Butter
- ¼ cup of chopped onions
- 3 Tablespoons of Flour
- 2 Tablespoons of Olive Oil
- 1.5 Cups of Chicken Broth
- ¼ cup of whipping cream
- 1 Jar of Salsa Verde (I used Trader Joes)
- 7 flour tortillas
- 1 Large Can of Chicken
- 3 Cups of Shredded Mozzarella
- Chopped Cilantro for garnish
Instructions
- Preheat oven to 350 F
- Melt butter in a skillet
- Add onions and sauté
- Add flour and stir till well mixed
- Add in olive oil till thin
- Add chicken broth and whipping cream
- Stir until creamy like a cream soup
- Add salsa verde and stir
- Pour ¼ of sauce into the bottom of a 13 x 9 pan
- Roll up tortillas with chicken, salsa verde sauce and cheese
- Top with remaining sauce, cheese and cilantro
- Bake for 20 minutes or until cheese is melted
