These Pumpkin Power Balls are tasty treats, perfect for after school snacks or a tasty bite with your morning coffee! We love our peanut butter power balls which are very similar, these just have a fun fall twist. I love the added crunch with the pepitas and the gentle notes of pumpkin. I love making power balls to have in the fridge anytime. They are such a simple, healthy and tasty snack to have on hand when life is busy!
What are Power Balls
Power balls, energy balls and protein balls are all interchangeable in my opinion. They are a snack typically made from equal parts oats to equal parts nut butter. Then add in a few extras for flavor like honey, chocolate chips, cinnamon, nuts, dried fruit or any other topping you might find tasty.
I've made our Peanut Butter Power Balls more times than I could ever count. They are an awesome snack to have on hand. I keep them in the fridge and everyone grabs one or two anytime they're looking for something to hold them over till the next meal. The pumpkin power balls are just as tasty, but with the added fall flavors of pumpkin!
Pumpkin Power Balls
Enjoy these delicious pumpkin power balls for a snack anytime!
Ingredients
- ¼ Cup Pumpkin
- 1 cup of Oats
- 1 cup of Peanut Butter
- 1 teaspoon Cinnamon
- 2 Tablespoons Honey
- ½ Cup of Chocolate Chips
- ¼ Cup of Pepitas
Instructions
- Pour all ingredients into a bowl and stir.
- Use a 1 inch cookie scoop to scoop out of the bowl.
- Roll each scoop into balls. Repeat until finished.
