I was so excited to find out that I am one of 25 food bloggers competing in Saucy Mama's Food Blogger Sliced contest! The contest is similar to the Food Network show Chopped, except you blog your recipe. There are three rounds starting with the appetizer round. I am supposed to use one of their mustards plus a secret ingredient. When I found out the secret ingredient was bacon... I immediately thought Jalapeño Poppers. My mother-in-law makes them for parties all the time and I thought a taste of dill would be a great touch. The recipe for Dill Jalapeno Bacon Poppers is below.
First things first, you need to fry your bacon and slice those jalapeños. I chopped up my bacon into ½ inch size pieces and then fried it until crispy. For the jalapeños - I sliced them lengthwise and removed all the seeds and ribs. I used my metal ¼ teaspoon to help with the seed removal. It makes for a quick and easy prep. Be sure you preheat your oven to 350.
Next, mix the cream cheese and Saucy Mama's Dill Mustard until smooth. Add in the cheddar cheese and combine. Layout your jalapeños on a foil lined cookie sheet and fill them with the dill mustard and cheese mixture. Top with your crispy bacon bits and sprinkle with mozzarella cheese. Pop those babies in the oven for about 20 minutes.
When your poppers are done place them on a dish of your choice and serve them up at your next party. The dill mustard adds a really nice crisp flavor to the poppers! I sure hope I make it to the next round! I can't wait to make an entree and a dessert with mustard!
