Time to switch up your salad game!? Try this Cherry & Chicken Spinach Salad made with beets, goat cheese, avocado and chopped pecans for a tasty new lunch dish. Cherry is not something I typically put in a salad but when I saw these bright beautiful red cherries in the store, I knew I had to try it! I'm working with True Story Foods to bring you this new salad recipe made with their thick cut oven-roasted turkey breast. This is one of those salads that hardly takes any prep which is awesome for a busy day!
Now that the kids are back in school, I am re-prioritizing my health. I've always been a pretty healthy eater, but when we are on-the-go a lot or busy with activities, I tend to put my healthy needs on the back burner. But first, let's dive into this Cherry & Chicken Spinach Salad!
This salad can be thrown together in a matter of minutes with True Story's tasty chicken. No cooking required for this meal! All you really need to do is chop up the cherries, avocados and the chicken if you'd like.
Don't you just love the vibrance of those cherries!? I'm overly excited by the colors in the produce aisle. This is seriously how I end up creating recipes. I'll look for whatever item pops out to me in the store, then I think of what flavors would blend well with it.
I went for goat cheese and spinach right away. Then I thought of adding some beets, avocado and the pecans. I used the flavored pecans that have a little sugar on them but you can use raw if you prefer. I grabbed the precooked beets in the salad bar section of the store. You can usually find them packaged and cooked near the herb section too.
Cherry & Chicken Spinach Salad
Ingredients
- 2 Cups of Spinach
- 1 Handful of Cherries, Deseeded & Chopped
- ½ Package of True Story Thick Cut Oven-Roasted Turkey Breast
- 1 Tablespoon of Goat Cheese, Crumbled
- ½ Avocado, Chopped
- 1 Tablespoon of Chopped Pecans
- 1 Cooked Beet, Chopped
- 2 Tablespoons of Vinaigrette
Instructions
- Place Spinach in A Bowl
- Add Salad Toppings
- Drizzle Vinaigrette on Top
You guys have got to try this super simple end of summer salad. You can make your own vinaigrette with 3 parts EVOO to 2 parts balsamic with salt + pepper, or use store bought. The cherries blend in so well with the chicken, spinach and goat cheese. Then that crunch of pecan with the smooth avocado tie it all together with the drizzle of vinaigrette.
