When we went to Palm Springs and stumbled upon Elmer's for lunch, I ordered the German Pancake topped with lemon slices, butter and powdered sugar. It looked too good not to try even at lunch time. It was sooo good! I knew right then that I would be making German Pancakes soon. I adjusted the recipe a bit for Mini Lemon German Pancakes and they are awesome!
Why make German Pancakes?
First of all, these are so delicious and a unique take on an everyday staple! The texture of these is way different than a typical pancake. They are made with more egg and less flour. They are almost like crepes but a little thicker. You can make them as thin or thick as you like depending on how much batter you add to the pan.
Ingredients Needed
You'll need similar ingredients to regular pancakes for this recipe but make sure to also grab powdered sugar and lemon!
- Eggs - eggs are the main ingredient in the recipe.
- Flour - the flour helps bind everything together.
- Milk - you can use any kind of milk you like.
- Vanilla Extract
- Salt
- Lemon - you can use lemon extract if you don't have lemons.
- Powdered Sugar - this really brings the dish together!
- Butter
This recipe for Mini Lemon German Pancakes does come out a little thicker than the one I had a Elmers, but still - oh, so tasty!
A Few Tricks for Mini German Pancakes
- Preheat the oven to 425
- Melt the butter directly in the mini pans
- Brush the butter up the sides of the pan
- Mix your batter in an easy to pour blender
- Keep a close eye on the pancakes so they don't over cook
These look so absolutely beautiful and are extremely easy to make. They literally take less than 15 minutes to prepare and cook, yet they look so fancy!
Mini Lemon German Pancakes
Mini Lemon German Pancakes
Ingredients
- 4 Eggs
- ½ Cup Flour
- ½ Cup Milk
- ½ Teaspoon of Vanilla Extract
- ½ Teaspoon of Lemon Extract or Squeeze of Lemon
- ½ Teaspoon of Salt
- 1 Lemon, sliced
- 1 Tablespoon of Powdered Sugar
- 1 Stick of Butter
Instructions
- Preheat oven to 425
- Put ½ Tablespoon of butter in each mini pan
- Put mini pans on a cookie sheet and bake till melted
- Pull cookie sheet and mini pans out of the oven
- Mix batter in blender or magic bullet - eggs, flour, milk, vanilla, lemon, salt
- Bake for 10-11 minutes. Keep an eye to make sure they don't burn
- Top with Lemon slices, butter and powdered sugar
