St. Patty's Day is this weekend and I'm celebrating with these tasty Irish Coffee Martini's! These are insanely easy to make with just 2 ingredients. I thought I would get all fancy and make an Irish Cheesecake Dessert, then my whipping cream didn't come together and I opted out for this cocktail instead. Turns out it is just as good. I'll be working on that no bake cheesecake idea though and share it with you once I've got it down. In the meantime, check out this martini!
For this Irish Coffee Martini, simply mix 3 parts cold brew coffee and 1 part Irish Cream. I picked up my ingredients at Trader Joes but you can buy this combo of ingredients at most grocery stores these days. If you don't see cold brew coffee you can use regular brewed coffee. I really liked the richness of this one though.

For this St. Patrick's Day we are going camping for the first time in a long time! I'm looking forward to enjoying the great outdoors with the family.
