One of my absolute favorite appetizers right now is Burrata Caprese. We first got the idea after trying Isola Pizza Kitchen’s version, which is so delicious. My mom started making this dish a few months ago and now it is my absolute favorite. I could even eat this as a meal in itself! I’ve found that pairing the Burrata Caprese is even better with a glass of light bodied red wine like a pinot noir. I’m really excited about fresh and healthy recipes right now. We got in a crazy rut there for a while where we were not eating very much healthy food. I’m on a mission to change that. I want our family to eat real and healthy food as much as possible. I once heard of an 80/20 rule where you try to eat 80% healthy foods and 20% whatever else. I’m all for this rule.
I really love simple recipes that do not require a ton of ingredients. This recipe is just that. There are only 3 main ingredients: tomato, basil and burrata cheese. Then it is topped with a delicious olive oil, balsamic vinegar, Italian seasoning and salt & pepper. Have you tried burrata? It is an Italian cheese made from mozzarella and cream. Burrata is so creamy and when you add oil and balsamic it really has a tasty flavor.
This light and tasty appetizer pairs really well with a Pinot Noir. I paired this one with Turn Key from Grocery Outlet. Burrata Caprese
2 Organic Tomatoes from the Vine
1 Bunch of Organic Basil
1 Ball of Burrata
2 Tablespoons of Olive Oil
2 Tablespoons of Balsamic Vinegar
1 Teaspoon of Italian Seasoning
Salt & Pepper to taste
Slice tomato into ¼ inch thick slices
Slice Burrata ball into 6-8 pieces and set on each tomato
Top with oil, balsamic, and seasonings
Top with one piece of basil
