Monti's Roasted Carrot Soup & Soda Bread

So... I might sound a little crazy, but Monti from Master Chef is following me!!!! This is super exciting to me. Monti and Christine were my favorite contestants on Master Chef this year. I love food and cooking and these ladies sure know how to make it look good.

After I got this email this morning, I checked out Monti's website and saw a posting on her Soup & Soda Bread. I have been wanting to make this ever since she made it on Master Chef. I loved her story about how this meal is something she would make for her son on a rainy day. I really related to her since I am always trying to make new and nutritious meals for my daughter.

The link to the recipe on her site goes to a book preview page. It seemed a little hard to navigate while trying to follow a recipe. So... I did a little copy/pasting and created a single image to show the recipe.

This is a great recipe for October. It is just starting to feel like fall with all the Halloween decorations and the rainy weather. I plan to try out the recipe next week... I will let you know how it tastes!
