Back to School season is here and I’m making more simple recipes for busy families! You’re going to love this easy Arugula Salad with Steak for any night of the week. These salads can even be made ahead of time for a quick grab-and-go lunch! I'm partnering with the California Beef Council to bring you this delicious ribeye steak salad that can also be used as a mason jar salad recipe!
Why Make Steak Salads?
Steak Salads make for a super delicious and nutritious meal. The flavors of the steak paired with the grilled onions and blue cheese remind me of a juicy burger, but in salad form. The shallot vinaigrette ties everything together for a harmonious combination of flavors.
The Ingredients in the Recipe
- Steak: Flank, Ribeye or Skirt Steak are all options that work well. Use any thin cut piece of beef from the butcher, that can be cooked on a grill pan in about 3-5 minutes per side. Think easy, quick and delicious.
- Arugula- I like the peppery flavor of arugula for steak salads but you can use any salad greens you prefer.
- Campari Tomatoes - Substitute any tomato variety.
- Blue Cheese Crumbles - You could also use feta.
- Yellow Onion - White onion or red onion would also work fine. I prefer the yellow onions for grilled onions.
- Shallots - These vary in size. Use 1 medium shallot or 2 small shallots.
- Avocados - Any variety of avocado will work well.
- Marcona Almonds - Substitute with sliced almonds or chopped macadamia nuts.
- Oranges or orange Juice- I used the juice from 1 orange. You could add 2-3 Tablespoons of orange juice instead.
- Rice Vinegar - any rice vinegar variety will be good.
- Olive Oil - Use an extra virgin olive oil for the most flavor.
- Garlic, Salt & Pepper Seasoning - You can make your own combination or use “The Blend”
- Salt and Pepper to Taste for Dressing
How to Make a Delicious Steak Salad
First, grill your steak for the salads. I used a grill pan on medium heat. Season the steak with salt, pepper and garlic blend on both sides. Grill the steak for 3-5 minutes on each side. Slice thin for steak strips.
Make the Salad Dressing
Dice the shallots into thin pieces and add to a small mason jar. Next, add the juice from an orange, the oil, rice vinegar and salt & pepper to taste. Add the lid to the jar and shake well to combine.
While the steak is cooking, slice the onions to add to the grill pan once the steak is done. Slice tomatoes into quarters. Slice avocados into thin strips. Set out remaining ingredients.
Assemble the Salads
Once everything is ready, you can assemble the salads. Start with a bed of arugula. Add steak to the middle of the salad. Add tomatoes to one side and avocados the other side. Top with blue cheese crumbles, then the Marcona Almonds. Next, add the grilled onions and add the dressing to the side.
Arugula Salad with Steak

Ingredients
- 1-2 Pounds of Flank Steak, Ribeye or Skirt Steak
- 5 Oz of Arugula
- 5 Campari Tomatoes
- 5 Oz Blue Cheese Crumbles
- 1 Yellow Onion
- 1 Shallot
- 2 Avocados
- ½ Cup of Marcona Almonds
- 3 Tablespoons of Orange Juice
- 1 Tablespoon of Rice Vinegar
- ½ Cup of Olive Oil
- 2 Teaspoons of Garlic, Salt & Pepper Seasoning
- Salt and Pepper to Taste
Instructions
- Heat a grill pan on medium heat to grill steaks.
- Season the steak with salt, pepper and garlic blend on both sides.
- Grill the steak for 3-5 minutes on each side.
- Slice thin for steak strips.
- While the steak is cooking, slice the onions to add to the grill pan once the steak is done. Cook onions till translucent and starting to brown, about 10 minutes.
- Slice tomatoes into quarters.
- Slice avocados into thin strips.
- Set out remaining ingredients.

Make Steak Salads in a Jar
For a quick and easy lunch option, assemble your steak salads in a jar! First, add 2 tablespoons of the dressing to the jar. Add tomatoes, avocados and grilled onions. Next add the almonds, blue cheese and steak. Fill the remainder of the jar with arugula and refrigerate until ready to enjoy!
