Our schedule for the next couple months just filled up real quick with softball and spring activities. I am very excited for this but also realized real quick that I need to do a little meal prep to keep dinner on the table. In an effort to make dinners easier this week, I decided to cook up a bunch of chicken in the crock pot. I ended up making at least 4 meals out of this one protein. 7 Recipes Made With Chicken could be helpful for you to have on hand as well!
Cook the Chicken
Okay, this may seem like a no-brainer to some, but cook the chicken first. I bought a large package of chicken breasts and put them in the crockpot on low for about 6 hours. You can season these with whatever you'd like. Salt and pepper is fine. I used an everyday seasoning. That's all I added and the water from the chicken will naturally expand and give it something to cook in. If you check on it and it's completely dry, add water. Take the chicken out of the crock pot and store airtight containers in the fridge until you are ready to make your recipes.

All of these recipes are super easy to make once you have cooked chicken to use. We had BBQ Chicken Quesadillas and Chicken Noodle Soup for dinners this week and I had a big batch of Chicken Salad Sandwiches for lunches. It was so nice to have food easy to prepare or ready to go for each meal.
