A Fluffernutter is a childhood classic sandwich made from white bread, marshmallow cream and peanut butter. I hadn't had one in years, when I went to make the kids some sandwiches in the dessert. I realized we were out of lunch meat and jelly so I thought I'd surprise them with their first Fluffernutter. You would not believe the excitement! They found their new favorite sandwich. In an effort to make this tasty combination slightly more nutritious, I created Fluffernutter Oatmeal Pancakes With Banana & Coconut and these are oh, so, yummy!
If you've tried our Fluffy Strawberry and Nutella Pancakes, you're going to love these too! The batter is very similar with just a pinch of salt and add oatmeal to it.
How to Make Fluffernutter Pancakes?
First, make your batter from flour, baking powder, salt, sugar, milk, egg, butter and oatmeal. Pour a ½ cup of batter into a pan on medium heat and heat until bubbles form. Flip the pancake and cook another 1-2 minutes. Repeat until all pancakes are made. Then top each pancake with a thin layer of peanut butter. Add a dollop of marshmallow fluff and let it settle. Since the pancakes are still warm, it usually melts into a circle. Then top with sliced bananas and shaved coconut flakes.
These fluffernutter oatmeal pancakes are so delicious. Each bite is deliciously sweet but not too sweet. It's packed with flavor and reminds me just of those tasty fluffernutter sandwiches I enjoyed as a kid.
Fluffernutter Oatmeal Pancakes With Banana & Coconut
Fluffernutter Oatmeal Pancakes with Banana and Coconut will remind you of the childhood classic sandwich.
Ingredients
- 1 ½ Cups of Flour
- 3 Teaspoons of Baking Powder
- 1 Pinch of Salt
- 1 Tablespoon of Sugar
- 1 ¼ Cups of Milk
- 1 Egg
- 3 Tablespoons of Melted Butter, + butter for pan
- ½ Cup of Instant Oats
- 3 Tablespoons of Peanut Butter (½ tablespoon per pancake)
- 3 Tablespoons of Marshmallow Fluff (½ tablespoon per pancake)
- 2 Bananas, Sliced
- ½ Cup of Shredded Coconut
Instructions
- Mix the sugar, baking powder, oats, salt and flour in a bowl.
- Add in the milk, butter and egg.
- Stir till combined into a batter. If you let the batter sit for a few minutes it makes the pancakes even fluffier.
- Heat a skillet on medium heat then butter the pan.
- Use a ½ cup measuring cup to pour the pancake batter into the pan.
- Wait till there are bubbles all through the pancakes before flipping.
- Cook an additional 1-2 minutes on the second side.
- Add ½ a tablespoon of peanut butter to each pancake. Then add a ½ tablespoon of marshmallow fluff to the center to let melt.
- Sprinkle with coconut flakes and top with sliced bananas.
